Ratafià di Andorno is a sweet liqueur made from the alcoholic maceration of wild cherries. Giovanni Vialardi (1854), the most famous person in the local gastronomy, who was assistant head chef and pastry chef to King Carlo Alberto and King Vittorio Emanuele II, also mentions this five-hundred-year-old recipe in his Trattato di cucina (cookery treatise).

Il principale prodotto era ed è ancor oggi il Ratafià di Andorno alle ciliegie nere, che Angelo Brofferio nelle "Tradizioni Italiane" del 1848 fa risalire ad un'antica leggenda dell'anno Mille. Il suo gusto delicato e avvolgente, in cui la dolcezza delle ciliegie si fonde con la nota della mandorla amara, lo rende gradito a tutti.

Nella sua opera "Le tradizioni italiane", edita nel 1848, il poeta e scrittore piemontese Angelo Brofferio ricorda la leggenda di un taumaturgico liquore di ciliegie prodotto fin dall'anno Mille in quel di Andorno (oggi Andorno Micca, nei pressi di Biella), capace di immunizzare dal contagio della peste chi ne facesse uso: una sorta di vaccino naturale ante litteram.
